Frosted Peppermint Brownies

I love chocolate. I love brownies. I love peppermint. I love essential oils. I love when they collide.

Frosted Peppermint Brownies 2 cups of sugar 4 eggs 1 teaspoon vanilla extract (we use homemade. yum!) 1 cup butter, melted 4-5 drops of doTerra Peppermint essential oil 1 cup of unbleached flour 2/3 cup baking cocoa 1/2 teaspoon baking powder 1/2 teaspoon salt

FROSTING: 6 Tablespoons cocoa 6 Tablespoons butter, melted (or coconut oil) 3 cups confectioners’ sugar 4-5 Tablespoons water 2-3 drops of therapeutic grade Peppermint essential oil

In a large bowl, beat sugar, eggs and vanilla together. Add butter and mix well. Add drops of Peppermint essential oil and blend. Add baking powder, salt, cocoa and flour and mix well. Pour into a greased 9×13 baking dish and bake at 350 for 25 minutes or until an inserted toothpick comes out clean. Cool on a wire rack. When brownies are completely cooled – For frosting, combine cocoa, butter and Peppermint essential oil. Gradually stir in confectioners’ sugar and enough water to produce a spreadable consistency. Then frost brownies. We can eat a whole tray of them…
